Cinco de Mayo is right around the corner and that’s why this week I want to share a few Mexican inspired recipes that you can make at home to please any palate.
I know I’ve mentioned this before but I would never get over the fact that I didn’t like avocados growing up. It wasn’t until 4 years ago when I was living in Chicago that I decided to give them a second chance and felt in love with them right away. Now, I eat them every day.
Avocados are an incredible source of healthy fats, fiber and vitamin C. They are not also great by themselves or in dips but they make a great base for any creamy dessert (think mousses, pie fillings, etc.)
This simple guacamole recipe is sublime… The combination of flavors and the creamy yet chunky texture is going to have you eating it straight from the bowl with a spoon!
Serves: 4 Prep Time: 15 min. Cooking time: - Total: 15 min.
- 2 avocados
- ½ yellow onion
- 1 garlic cloves
- ½ jalapeño pepper
- 1 tbsp. fresh cilantro leaves
- Juice of 1 lime
- 1 tomato
- ½ tsp sea salt
- ¼ tsp black pepper
- Cut the avocados in big chunks and the rest of the veggies in small chunks.
- Combine all the ingredients in a bowl and mix with a fork smashing the avocado pieces until everything is well mix and you have a creamy texture with some small avocado chunks.
