Forbidden Rice + Berries

Black rice has been one of my favorite grains for a long time. I love its flavor and texture! I usually use it as a side dish or to make risotto but since it's so versatile this time I decided to turn it into a simple  but delicious breakfast that will give you sustainable energy throughout the day.

This is not a sweet dish at all. To make it a bit sweeter you can add more fruits, maple syrup or even a tbsp.coconut sugar. 


Serves: 4                 Prep Time: 5 min.                   Cooking time: 30 min.                   Total: 35 min.


Ingredients

  • 1 cup black rice
  • 3/4 cup of water
  • 1 cup of cashew milk
  • 2 tsp. cinnamon
  • 2 tsp. vanilla extract
  • 2 cup berries
  • 8 tbsp. organic maple syrup (optional)

Directions

  • In a pot mix the water, cashew milk, cinnamon, vanilla and bring it to a boil.
  • Add the rice, stir, bring it to low-heat and cover.
  • Cook for 30 min.
  • Serve 1 cup rice with 1/2 cup berries and 2 tbsp. maple syrup per person.
