Black rice has been one of my favorite grains for a long time. I love its flavor and texture! I usually use it as a side dish or to make risotto but since it's so versatile this time I decided to turn it into a simple but delicious breakfast that will give you sustainable energy throughout the day.
This is not a sweet dish at all. To make it a bit sweeter you can add more fruits, maple syrup or even a tbsp.coconut sugar.
Serves: 4 Prep Time: 5 min. Cooking time: 30 min. Total: 35 min.
- 1 cup black rice
- 3/4 cup of water
- 1 cup of cashew milk
- 2 tsp. cinnamon
- 2 tsp. vanilla extract
- 2 cup berries
- 8 tbsp. organic maple syrup (optional)
- In a pot mix the water, cashew milk, cinnamon, vanilla and bring it to a boil.
- Add the rice, stir, bring it to low-heat and cover.
- Cook for 30 min.
- Serve 1 cup rice with 1/2 cup berries and 2 tbsp. maple syrup per person.
