Raw Coco Chip Cookies

Who said that raw vegan plant-based food couldn’t be fun and delicious? Well, they were wrong!

This recipe was the simple result of mixing some of my favorite pantry staples when I was craving a sweet afternoon snack.

These raw vegan cookies are not only super healthy and delicious but also dairy, soy and gluten free!

Their flavor is very mild and not too sweet. One of these cookies will provide you with enough energy to continue your day while giving your body some protein and the healthy fats it needs. Craving something sweet? Search no more!

Ingredients

  • 8 pitted medjool dates
  • 1/4 cup coconut oil
  • 1/2 cup coconut flour
  • 1/2 cup shredded coconut
  • 1/2 cup almond butter
  • 1/4 cup unsweetened cacao nibs
  • 1/4 cup cashew milk

Directions

  • In a food processor or blender mix the dates until they form a paste.
  • Add the rest of the ingredients and mix well.
  • Grab some of the mix and make cookies with your hands.
  • Roll the cookies through some more shredded coconut (optional)
  • Stick in the fridge for at least 2 hours before serving
