I’m a big fan of thai everything, especially salads! I love the sweet and sour combination that are very common in the flavors of this cuisine so my love for Asian food inspired me to create this simple dressing.
This oil-free salad dressing is salty, which makes it a great option when wanting to add tons of flavors to a simple salad or when wanting to hide other strong flavors like for example the one of kale.

1 tbsp. chickpea miso
Juice of 1 lemon
1 tbsp. apple cider vinegar
1 tbsp. balsamic vinegar
Pinch of black pepper
Mix all the ingredients in a bowl with a fork or mixer. You can also combine them in a blender for a smoother texture.
