Mystic Peanut Butter Cookies

I love peanut butter… And who doesn’t, right? In the bakery section of Whole Foods they have the most amazing vegan peanut butter cookies. They’re so good that I’m completely guilty of buying even 5 at a time.

Yes, they’re vegan but that doesn’t mean they’re healthy. That’s a big misconception some people have. The fact that something is labeled gluten free or vegan doesn’t mean that it’s good for you.

I have no idea of what ingredients they use to make these cookies. Maybe they’re completely clean or maybe they are packed with refined sugar, oils and processed flours. That’s why I decided to come up with a recipe and make my own at home… Enjoy!

Serves: 8                  Prep Time: 20 min.                  Cooking time: 15 min.                  Total: 35 min.


  • 1 1/4 cup peanut butter (homemade or make sure the only ingredients are peanuts and sea salt)
  • 1 cup coconut sugar
  • Mix of 1 tbsp. chia seeds soaked for 5 min. in 3 tbsp. filtered water
  • 1/4 cup filtered water
  • 1/2 cup coconut flour
  • 1/4 cup almond flour
  • 1 tsp. baking soda
  • 1/4 tsp. sea salt


  • Pre-heat the oven to 375F.
  • Mix the peanut butter and sugar in a bowl with an electric mixer until blended.
  • Add the chia seeds mix and water. Keep mixing.
  • Add flour, baking soda and salt and keep mixing until all the ingredients are combined.
  • Make balls with your hands with about 1 tbsp. of the mix. Press them into a baking sheet leaving 2 inches in between and make a crisscross pattern with a fork.
  • Bake in the oven for 15 min.
  • Let them cool for about 15 min. before indulging.
